Lemon Drizzle Cupcakes

Now that the sun is making more regular appearances, I thought it was time to start some spring baking. One of my favourite spring flavours, now that all of the Easter chocolate bakes are out of the way, is lemon. In particular I love a classic Lemon Drizzle Loaf Cake, it’s always popular and goes so well with a cup of tea. If a cake goes well with a cuppa, it’s a good one!

The recipe below for my individual Lemon Drizzle Cakes makes 9 gluten and dairy free cupcakes, which will last a few days in an airtight container. While I love to decorate cakes, it’s sometimes nice to appreciate a cake without all the sweetness on top! This recipe does exactly that and focuses on the moist, citrus sponge, with a hint of crisp lemon sugar on the surface.

Lemon Drizzle Cakes

Servings: 9 Cupcakes

Ingredients

  • 170 g Butter (dairy free)
  • 170 g Caster sugar
  • 3 Eggs
  • 170 g Gluten free self-raising flour
  • 1 Lemon (zest and juice)

For the drizzle

  • 75 g Granulated sugar
  • 1 Lemon (zest and juice)

Instructions

  • Preheat the oven to gas mark 4 or 180 degrees.
  • In a large bowl, cream together the butter and sugar. Gradually add the egg and self-raising flour while folding, until you have combined all the ingredients.
  • Add the zest and juice of 1 lemon, mix well then transfer the cake mixture to 9 cupcake cases.
  • Bake in the oven for 15-20 minutes, or until golden brown. Leave to cool for 10 minutes and prepare the drizzle.
  • Mix together the lemon juice and sugar to make a paste. Prick the top of the cakes with a skewer/cake tester making lots of small holes (so that the drizzle can pour right in!) then sprinkle with the lemon zest to decorate.
