Sausage-based Quiche

Ingredients

  • 400 g Sausages (The Jolly Hog Proper Porker Sausages)
  • 6 Eggs
  • 200 g Mixed peppers I used red and orange
  • 2 Tomatoes
  • 15 g Fresh basil
  • 100 g Cheddar cheese grated

Instructions

  • Preheat the oven to gas mark 6 or 200 degrees celsius.
  • Remove the sausagemeat from the casings and squash down into the base of an ovenproof dish.
  • Place in the oven and bake for 10 minutes.
  • Meanwhile, chop the pepper and tomatoes and fry in a little oil (you could use garlic-infused oil if you prefer).
  • Whisk the eggs in a bowl and season well.
  • Stir in the cheddar cheese and torn basil leaves.
  • Place the peppers on top of the sausage base and cover with the egg mixture.
  • Bake in the oven for 25-30 minutes or until golden. Serve with a light salad.
