Preheat the oven to gas mark 6 or 200 degrees celsius.
Remove the sausagemeat from the casings and squash down into the base of an ovenproof dish.
Place in the oven and bake for 10 minutes.
Meanwhile, chop the pepper and tomatoes and fry in a little oil (you could use garlic-infused oil if you prefer).
Whisk the eggs in a bowl and season well.
Stir in the cheddar cheese and torn basil leaves.
Place the peppers on top of the sausage base and cover with the egg mixture.
Bake in the oven for 25-30 minutes or until golden. Serve with a light salad.
