Gluten free breaded fish cooked in the @instantpot Gluten free breaded fish cooked in the @instantpotuk air fryer (which I was kindly gifted)! I’ve been experimenting with the air fryer this past week, and this has been one of my favourites! I bought some cod fillets from @aldiuk then dipped them in egg, breadcrumbs, salt and pepper, then air-fried for 15 minutes. Delicious! Served with @auntbessiesofficial chips and a small portion of mushy peas (reintroduced). The fish fillets had a crisp coating, but were so moist inside and just fell apart. Exactly how it should be! The air fryer cooks and crisps food, while maintaining moisture, I’d highly recommend it. Have you got an air fryer? Let me know your meals to make below.🐟🐠

I made the banana and chia pancakes from my blog and served them with strawberries, blueberries, icing sugar, lactose-free yoghurt and maple syrup. Perfect for a spring morning! Last night we tried the @quorn_uk Turkish style ke Last night we tried the @quorn_uk Turkish style kebab with homemade gluten free flatbread, lettuce, tomato, air-fried chips and homemade low FODMAP tzatiki. The kebab-style meat is vegan, gluten free and it doesn’t contain any onion or garlic (I double checked!) This was so quick and easy to make, and most importantly, it tasted incredible! I love incorporating more meat free meals into our diet, especially when they taste this good! Let me know if you give it a try.

Vegan chilli con carne! As it’s the Easter holid Vegan chilli con carne! As it’s the Easter holidays I’m trying to reintroduce different portions and combinations of vegetables into my diet, as I’m so keen to reduce my meat and fish consumption while maintaining a happy and healthy gut. My vegan chilli contains mixed peppers, fresh chillies, tinned mushroom, roasted sweet potato, plum tomatoes and a few mixed beans. It was so tasty! I can’t wait to try more vegan recipes. I served it with a little avocado (high FODMAP which I’ve reintroduced) and some basmati rice. Despite all the potential triggers, the after effects weren’t too bad! Worth it potentially for such a delicious and nutritious meal. How have your reintroductions been going? Is there anything you can now tolerate?
AD I’ve been using @foodmarble for a few weeks n AD I’ve been using @foodmarble for a few weeks now and I’ve been finding the results so helpful. The device measures hydrogen levels in your breath to see how well you digest certain foods. If foods are not very well digested, they will ferment, releasing more hydrogen. Today I have begun introducing FODMAPs and I started with fructose. I don’t know about you but I’d love to enjoy a wider variety of fruit this summer. I drank the sachet provided (the equivalent fructose levels found in two apples) and recorded breath tests throughout the day. The app showed that my hydrogen levels gradually increased, particularly after consuming the sachet. I predicted this might happen as apples were one of the first foods that ever upset me - I rarely ate them because of it! I now know to continue consuming low amounts of fructose in my diet. I will be trying the rest of the FODMAP reintroductions (lactose, sorbitol and inulin) in the next couple of weeks, so watch this space! Despite it being cold, sunshine like this calls for a delicious, healthy salad featuring some mini salmon burgers I found in @waitrose. These are onion and garlic free, and a nice change from beef burgers! They are flavoured with dill and lemon which can be a little overpowering, but they were perfect with a light salad. I am probably one of the few people who has watched Seaspiracy yet still eats fish. I found it a very interesting watch, but there wasn’t anything I wasn’t already aware of from following @davidattenborough, @ricobarry, @seashepherd and from my degree in Zoology however I’m desperately trying to cut down on all animal consumption - both meat and fish. Following a low FODMAP diet with a nut allergy is hard enough without further restrictions, although I do carefully consider how I can reduce consumption over the long term. I’d love to hear your thoughts on this... the government need to protect more marine areas to make a real difference in my view..!🐟🌊🐠

Happy Easter 🐣🌼🐰 what a lovely sunny morn Happy Easter 🐣🌼🐰 what a lovely sunny morning! Today we are going on a long dog walk, chilling in the garden and eating this @cadburyuk mini egg filled sponge cake! I used the celebration drip cake recipe from my blog for the sponges, removed a hole of sponge in the middle layer to fill with mini eggs and then decorated with buttercream and eggs. Delicious! Note the tinged edge to the middle layer - we are in desperate need of a new oven but currently saving for a whole new kitchen! It cooks so unevenly and I have to guess the oven temperature as the numbers have worn off 🙈 I hope you all have a lovely Easter Sunday!

AD (gifted/invite) A couple of weeks ago I was inv AD (gifted/invite) A couple of weeks ago I was invited to a cookalong with @circulonuk to launch their brand new SteelShield Chef’s Pan. This was exciting enough, then I found out that the chef running the cookalong was Masterchef’s @marcuswareing. I had such a great time learning from the expert himself and using the new pan from Circulon. We made a delicious mustard-stuffed chicken breast and served it with a rich, creamy sauce, oyster mushrooms and pan-fried gem lettuce. I’ve recently been buying fresh raw king prawns I’ve recently been buying fresh raw king prawns from @sainsburys and they are the juiciest, meatiest, most delicious prawns I’ve had in a long time. I decided to cook them as part of a creamy risotto with white wine, cherry tomatoes, parsley, Parmesan and vegetable stock. A really tasty, one-pan meal and a nice change from a Sunday roast!

Such a simple yet delicious pasta dish for dinner. Such a simple yet delicious pasta dish for dinner. Pan fry king prawns in garlic-infused oil with cherry tomatoes, basil, red chilli and season well, before serving with gluten free spaghetti. Top with a generous sprinkling of Parmesan and enjoy! The bigger the prawns, the better! I have quite a few pasta recipes on my blog as I find them quick, filling and flavoursome, but I’m always keen to try more! What are your favourite pasta dishes?
